Grilled Peach Burrata Salad
Ingredients
- 2 ripe peaches, halved and pitted
- 150 g burrata cheese
- 4 cups arugula (rocket)
- 1 cup cherry tomatoes, halved
- ¼ red onion, thinly sliced
- ¼ cup toasted pecans
- Fresh basil leaves
Honey Balsamic Dressing
- 3 tbsp extra virgin olive oil
- 2 tbsp balsamic glaze
- 1 tbsp honey
- 1 tsp Dijon mustard
- Salt and freshly ground black pepper
Instructions
- Brush the peach halves with a little olive oil and grill for 2–3 minutes per side until lightly caramelized.
- Arrange the arugula on a serving platter.
- Add the grilled peaches, cherry tomatoes, red onion, toasted pecans, and burrata in the center.
- Whisk together the olive oil, balsamic glaze, honey, Dijon mustard, salt, and pepper.
- Drizzle the dressing over the salad.
- Garnish with fresh basil leaves and serve immediately with toasted artisan bread.
