Lemon Pesto Burrata Pasta

Ingredients

  • 300 g spaghetti
  • 1 cup basil pesto
  • 1 ball burrata cheese
  • 1 cup cherry tomatoes, halved
  • Juice of ½ lemon
  • 2 tbsp olive oil
  • 2 tbsp grated Parmesan cheese
  • Salt and black pepper, to taste
  • Red pepper flakes (optional)
  • Fresh basil leaves for garnish

Instructions

  1. Cook the spaghetti according to package directions until al dente. Reserve ¼ cup of pasta water.
  2. Toss the hot pasta with the pesto and lemon juice.
  3. Add a little pasta water if needed to create a silky sauce.
  4. Sauté the cherry tomatoes in olive oil for 2–3 minutes until slightly softened.
  5. Transfer the pasta to a serving plate and top with the tomatoes.
  6. Place the burrata cheese in the center of the pasta.
  7. Sprinkle with Parmesan cheese, black pepper, and red pepper flakes.
  8. Garnish with fresh basil leaves and serve immediately.
