Cheesy Mushroom & Beef Rice Bake

Ingredients
- 1 lb (450 g) ground beef (or mini meatballs)
- 2 cups mushrooms, sliced
- 2 cups cooked white or brown rice
- 1 cup marinara or tomato sauce
- 1½ cups shredded mozzarella cheese
- 1 small onion, diced
- 2 garlic cloves, minced
- 1 tbsp olive oil
- Salt and black pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 350°F (180°C).
- Heat olive oil in a large skillet over medium-high heat.
- Cook the onion and garlic until fragrant.
- Add the ground beef and cook until browned. Season with salt and pepper.
- Stir in the mushrooms and sauté for 3–4 minutes until tender.
- Add the cooked rice and marinara sauce. Mix until everything is well coated.
- Transfer the mixture to a greased baking dish.
- Sprinkle the mozzarella cheese evenly over the top.
- Bake for 15–20 minutes, or until the cheese is melted, bubbly, and lightly golden.
- Garnish with fresh parsley and serve hot.
