White Chocolate Raspberry Cake

Ingredients

For the Vanilla Cake

  • 2½ cups (315 g) all-purpose flour
  • 2½ tsp baking powder
  • ½ tsp salt
  • ¾ cup (170 g) unsalted butter, softened
  • 1¾ cups (350 g) granulated sugar
  • 4 large egg whites
  • 1 tbsp vanilla extract
  • 1 cup (240 ml) whole milk

Vanilla Milk Soak

  • ½ cup (120 ml) whole milk
  • 1 tsp vanilla extract
  • 2 tbsp sugar

Raspberry Jam

  • 2 cups (250 g) fresh or frozen raspberries
  • ⅓ cup (65 g) sugar
  • 1 tbsp lemon juice
  • 1 tsp cornstarch mixed with 1 tbsp water

White Chocolate Raspberry Frosting

  • 8 oz (225 g) cream cheese, softened
  • ½ cup (115 g) unsalted butter, softened
  • 6 oz (170 g) white chocolate, melted and cooled
  • 3 cups (360 g) powdered sugar
  • 1 tsp vanilla extract
  • 2–3 tbsp raspberry jam (for swirling)

Instructions

  1. Prepare the cake: Preheat the oven to 350°F (175°C). Grease and line an 8-inch square baking pan.
  2. In a bowl, whisk together the flour, baking powder, and salt.
  3. In another bowl, beat the butter and sugar until light and fluffy. Add the egg whites one at a time, then mix in the vanilla.
  4. Alternate adding the dry ingredients and milk until just combined.
  5. Pour the batter into the prepared pan and bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool completely.
  6. Make the raspberry jam: Combine raspberries, sugar, and lemon juice in a saucepan. Cook over medium heat until the berries soften. Stir in the cornstarch slurry and cook until thickened. Cool completely.
  7. Prepare the milk soak: Mix together the milk, vanilla, and sugar until dissolved.
  8. Make the frosting: Beat the cream cheese and butter until smooth. Add the melted white chocolate, vanilla, and powdered sugar, beating until light and creamy.
  9. Assemble the cake: Brush the cooled cake with the vanilla milk soak. Spread a layer of raspberry jam over the cake, then cover with the white chocolate frosting.
  10. Swirl extra raspberry jam into the frosting using a knife for a marbled effect.
  11. Chill for at least 1 hour before slicing. Garnish with fresh raspberries and white flowers (optional).
