Easy Mixed Berry Pie

Ingredients

For the Pie Crust

  • 2½ cups (315 g) all-purpose flour
  • 1 tsp salt
  • 1 tbsp sugar
  • 1 cup (225 g) cold unsalted butter, cubed
  • 6–8 tbsp ice water

For the Berry Filling

  • 2 cups blueberries
  • 2 cups raspberries
  • 2 cups blackberries
  • ¾ cup granulated sugar
  • ¼ cup brown sugar
  • 3 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 1 tsp lemon zest
  • ½ tsp ground cinnamon (optional)

Egg Wash

  • 1 egg
  • 1 tbsp milk

For Serving

  • Vanilla ice cream

Instructions

1. Prepare the Dough

  1. Mix the flour, sugar, and salt.
  2. Cut in the cold butter until the mixture resembles coarse crumbs.
  3. Gradually add the ice water until the dough comes together.
  4. Divide into two discs, wrap, and refrigerate for at least 1 hour.

2. Make the Filling

  1. In a large bowl, gently combine the blueberries, raspberries, and blackberries.
  2. Add the granulated sugar, brown sugar, cornstarch, lemon juice, vanilla, lemon zest, and cinnamon.
  3. Toss carefully until the berries are evenly coated.

3. Assemble the Pie

  1. Preheat the oven to 400°F (200°C).
  2. Roll out one dough disc and place it into a 9-inch pie dish.
  3. Pour in the berry filling.
  4. Cover with the second crust or create a lattice top.
  5. Trim and crimp the edges.
  6. Brush with the egg wash.

4. Bake

  • Bake for 20 minutes at 400°F (200°C).
  • Reduce the temperature to 375°F (190°C) and bake for 35–40 minutes, until the crust is golden and the filling is bubbling.

5. Cool & Serve

Allow the pie to cool for at least 2 hours before slicing. Serve warm with a scoop of vanilla ice cream.
