Easy Mixed Berry Pie
Ingredients
For the Pie Crust
- 2½ cups (315 g) all-purpose flour
- 1 tsp salt
- 1 tbsp sugar
- 1 cup (225 g) cold unsalted butter, cubed
- 6–8 tbsp ice water
For the Berry Filling
- 2 cups blueberries
- 2 cups raspberries
- 2 cups blackberries
- ¾ cup granulated sugar
- ¼ cup brown sugar
- 3 tbsp cornstarch
- 1 tbsp lemon juice
- 1 tsp vanilla extract
- 1 tsp lemon zest
- ½ tsp ground cinnamon (optional)
Egg Wash
- 1 egg
- 1 tbsp milk
For Serving
- Vanilla ice cream
Instructions
1. Prepare the Dough
- Mix the flour, sugar, and salt.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Gradually add the ice water until the dough comes together.
- Divide into two discs, wrap, and refrigerate for at least 1 hour.
2. Make the Filling
- In a large bowl, gently combine the blueberries, raspberries, and blackberries.
- Add the granulated sugar, brown sugar, cornstarch, lemon juice, vanilla, lemon zest, and cinnamon.
- Toss carefully until the berries are evenly coated.
3. Assemble the Pie
- Preheat the oven to 400°F (200°C).
- Roll out one dough disc and place it into a 9-inch pie dish.
- Pour in the berry filling.
- Cover with the second crust or create a lattice top.
- Trim and crimp the edges.
- Brush with the egg wash.
4. Bake
- Bake for 20 minutes at 400°F (200°C).
- Reduce the temperature to 375°F (190°C) and bake for 35–40 minutes, until the crust is golden and the filling is bubbling.
5. Cool & Serve
Allow the pie to cool for at least 2 hours before slicing. Serve warm with a scoop of vanilla ice cream.
