Sweet Cherry Pie Recipe
Ingredients
For the crust:
- 2 ½ cups (315 g) all-purpose flour
- 1 tsp salt
- 1 tbsp sugar
- 1 cup (225 g) cold unsalted butter, cubed
- 6–8 tbsp ice water
For the cherry filling:
- 5 cups fresh or frozen pitted cherries
- ¾ cup (150 g) granulated sugar
- ¼ cup (30 g) cornstarch
- 1 tbsp lemon juice
- 1 tsp vanilla extract
- ½ tsp almond extract (optional)
- 1 tbsp butter
For brushing:
- 1 egg, beaten
- 1 tbsp coarse sugar (optional)
Instructions
- Mix the flour, salt, and sugar. Cut in the cold butter until the mixture resembles coarse crumbs.
- Add the ice water gradually until the dough comes together. Divide into two discs, wrap, and chill for at least 1 hour.
- In a bowl, combine the cherries, sugar, cornstarch, lemon juice, vanilla, and almond extract.
- Roll out one dough disc and place it in a 9-inch pie dish. Fill with the cherry mixture and dot with butter.
- Roll out the second disc and create a lattice top. Seal and crimp the edges.
- Brush with beaten egg and sprinkle with coarse sugar.
- Bake at 200°C (400°F) for 20 minutes, then reduce to 180°C (350°F) and bake for 35–45 minutes, until the crust is golden and the filling is bubbling.
- Cool for at least 3 hours before slicing so the filling sets.
Enjoy warm on its own or with a scoop of vanilla ice cream. 🍒🥧
