Sweet & Chili Roasted Chicken with Yogurt Sauce
Ingredients
For the Chicken
- 1 whole chicken, spatchcocked (or 4 chicken leg quarters)
- 4 tbsp sweet chili sauce
- 3 garlic cloves, minced
- 1 small onion, grated
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp paprika
- 1 tsp crushed chili flakes
- 2 tbsp lemon juice
- 2 tbsp mayonnaise
Yogurt Sauce
- 1 cup Greek yogurt
- ½ tsp garlic powder
- ½ tsp onion powder
- Salt, to taste
- ½ tsp black pepper
- 1 tbsp lemon juice
- 2 tbsp chopped fresh parsley
For Serving
- French fries
- Arabic bread (pita bread)
- Chopped parsley for garnish
Instructions
Step 1: Marinate the Chicken
- In a large bowl, combine the sweet chili sauce, garlic, grated onion, salt, black pepper, paprika, crushed chili flakes, lemon juice, and mayonnaise.
- Coat the chicken thoroughly with the marinade.
- Cover and refrigerate for at least 2 hours, preferably overnight.
Step 2: Bake
- Preheat the oven to 200°C (400°F).
- Place the chicken in a baking dish and cover tightly with aluminum foil.
- Bake for 45–60 minutes, or until the chicken is fully cooked.
Step 3: Broil
- Remove the foil.
- Baste the chicken with the juices from the baking dish.
- Broil for 8–12 minutes until golden brown and slightly charred.
Step 4: Prepare the Yogurt Sauce
- In a bowl, mix the Greek yogurt, garlic powder, onion powder, salt, black pepper, lemon juice, and chopped parsley.
- Stir until smooth and creamy.
Step 5: Serve
Place warm Arabic bread on a serving platter, top with the roasted chicken, and serve with crispy French fries and the creamy yogurt sauce. Garnish with chopped parsley and enjoy.
