Creamy Chicken & Rice Skillet

Ingredients

  • 2 chicken breasts, diced
  • 1 cup long-grain rice
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 small onion, diced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese
  • 1 tsp paprika
  • Salt and black pepper
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season chicken with paprika, salt, and pepper.
  3. Cook chicken until golden brown, then remove and set aside.
  4. Sauté onion and garlic until fragrant.
  5. Add rice and stir for 1 minute.
  6. Pour in chicken broth and bring to a simmer.
  7. Cover and cook for 15 minutes.
  8. Return chicken to the skillet.
  9. Stir in heavy cream and Parmesan cheese.
  10. Cook for 5 more minutes until creamy.
  11. Garnish with fresh parsley and serve hot.
