Mozzarella Stuffed Chicken

Ingredients (Serves 4)
For the Chicken
  • 4 chicken breasts
  • 200 g fresh mozzarella, sliced
  • 2 tbsp chopped parsley
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and black pepper
  • 1 tsp paprika
  • ½ tsp garlic powder
  • 2 tbsp olive oil
Optional Garlic Butter Sauce
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • 1 tbsp chopped parsley
  • 1 tsp lemon juice

👩‍🍳 Instructions
  1. Preheat the oven to 200°C (400°F).
  2. Cut a pocket into each chicken breast without slicing all the way through.
  3. Stuff each breast with mozzarella, parsley, garlic, and a little Italian seasoning.
  4. Secure with toothpicks if needed.
  5. Mix paprika, garlic powder, salt, and pepper, then season both sides of the chicken.
  6. Heat olive oil in a skillet over medium-high heat and sear the chicken for 3–4 minutes per side until golden.
  7. Transfer to the oven and bake for 15–20 minutes, or until the internal temperature reaches 75°C (165°F).
  8. For the sauce, melt butter in the same pan, sauté garlic for 30 seconds, stir in parsley and lemon juice, then spoon over the chicken.
  9. Serve hot with mashed potatoes, roasted vegetables, rice, or a fresh salad.
