Garlic Herb Chicken Dinner Bowl

A hearty meal featuring juicy garlic herb chicken drumsticks served with creamy mashed potatoes, roasted potatoes, glazed carrots, crispy French fries, and a rich homemade gravy.

Ingredients

For the Chicken

  • 4 chicken drumsticks
  • 2 tbsp olive oil
  • 4 garlic cloves, minced
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • ½ tsp dried thyme
  • ½ tsp black pepper
  • 1 tsp salt
  • 1 tbsp butter

For the Mashed Potatoes

  • 4 large potatoes, peeled and cubed
  • 3 tbsp butter
  • ½ cup warm milk
  • Salt and black pepper, to taste

For the Roasted Potatoes

  • 2 cups potato cubes
  • 1 tbsp olive oil
  • ½ tsp paprika
  • ½ tsp garlic powder
  • Salt and pepper

For the Glazed Carrots

  • 3 large carrots, peeled and cut into sticks
  • 1 tbsp butter
  • 1 tsp honey
  • Salt and black pepper

For the French Fries

  • 2 large potatoes, cut into fries
  • Oil for frying (or bake/air-fry)
  • Salt

For the Creamy Gravy

  • 2 tbsp butter
  • 2 tbsp flour
  • 1½ cups chicken broth
  • ¼ cup heavy cream
  • Salt and pepper to taste

Garnish

  • Fresh parsley, chopped

Instructions

  1. Prepare the chicken: Mix olive oil, garlic, paprika, Italian seasoning, thyme, salt, and pepper. Coat the chicken well and let it marinate for at least 30 minutes.
  2. Bake the chicken at 400°F (200°C) for 40–45 minutes, brushing with melted butter during the last 10 minutes until golden and juicy.
  3. Make the mashed potatoes: Boil the potatoes until tender. Drain, then mash with butter and warm milk. Season with salt and pepper.
  4. Roast the potatoes: Toss the potato cubes with olive oil and seasonings. Roast at 400°F (200°C) for 30–35 minutes, turning halfway through.
  5. Cook the carrots: Sauté the carrots in butter for 5 minutes. Add honey and cook for another 3–5 minutes until tender and glazed.
  6. Prepare the fries: Fry, bake, or air-fry the potatoes until crispy and golden. Season with salt.
  7. Make the gravy: Melt butter in a saucepan, whisk in the flour, then slowly add chicken broth. Stir until thickened, add the cream, and season to taste.
  8. Assemble the bowl with mashed potatoes, roasted potatoes, glazed carrots, French fries, and chicken. Spoon the creamy gravy over the center and garnish with fresh parsley.
