Garlic Herb Chicken Dinner Bowl
A hearty meal featuring juicy garlic herb chicken drumsticks served with creamy mashed potatoes, roasted potatoes, glazed carrots, crispy French fries, and a rich homemade gravy.
Ingredients
For the Chicken
- 4 chicken drumsticks
- 2 tbsp olive oil
- 4 garlic cloves, minced
- 1 tsp paprika
- 1 tsp Italian seasoning
- ½ tsp dried thyme
- ½ tsp black pepper
- 1 tsp salt
- 1 tbsp butter
For the Mashed Potatoes
- 4 large potatoes, peeled and cubed
- 3 tbsp butter
- ½ cup warm milk
- Salt and black pepper, to taste
For the Roasted Potatoes
- 2 cups potato cubes
- 1 tbsp olive oil
- ½ tsp paprika
- ½ tsp garlic powder
- Salt and pepper
For the Glazed Carrots
- 3 large carrots, peeled and cut into sticks
- 1 tbsp butter
- 1 tsp honey
- Salt and black pepper
For the French Fries
- 2 large potatoes, cut into fries
- Oil for frying (or bake/air-fry)
- Salt
For the Creamy Gravy
- 2 tbsp butter
- 2 tbsp flour
- 1½ cups chicken broth
- ¼ cup heavy cream
- Salt and pepper to taste
Garnish
- Fresh parsley, chopped
Instructions
- Prepare the chicken: Mix olive oil, garlic, paprika, Italian seasoning, thyme, salt, and pepper. Coat the chicken well and let it marinate for at least 30 minutes.
- Bake the chicken at 400°F (200°C) for 40–45 minutes, brushing with melted butter during the last 10 minutes until golden and juicy.
- Make the mashed potatoes: Boil the potatoes until tender. Drain, then mash with butter and warm milk. Season with salt and pepper.
- Roast the potatoes: Toss the potato cubes with olive oil and seasonings. Roast at 400°F (200°C) for 30–35 minutes, turning halfway through.
- Cook the carrots: Sauté the carrots in butter for 5 minutes. Add honey and cook for another 3–5 minutes until tender and glazed.
- Prepare the fries: Fry, bake, or air-fry the potatoes until crispy and golden. Season with salt.
- Make the gravy: Melt butter in a saucepan, whisk in the flour, then slowly add chicken broth. Stir until thickened, add the cream, and season to taste.
- Assemble the bowl with mashed potatoes, roasted potatoes, glazed carrots, French fries, and chicken. Spoon the creamy gravy over the center and garnish with fresh parsley.
