Lotus Biscoff Caramel Pancakes

Ingredients (Serves 4)
For the Pancakes
  • 2 cups (250 g) all-purpose flour
  • 2 tbsp sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • 2 eggs
  • 1¾ cups (420 ml) milk
  • 2 tbsp melted butter
  • 1 tsp vanilla extract
Toppings
  • 1 cup whipped cream
  • ½ cup caramel sauce
  • 6–8 Lotus Biscoff biscuits
  • 2 tbsp crushed Biscoff crumbs
  • Optional: 2 tbsp melted Biscoff spread

👩‍🍳 Instructions
  1. In a bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In another bowl, whisk the eggs, milk, vanilla, and melted butter.
  3. Combine the wet and dry ingredients until just mixed.
  4. Heat a lightly buttered non-stick pan over medium heat.
  5. Pour about ¼ cup of batter for each pancake and cook until bubbles form. Flip and cook until golden.
  6. Stack the pancakes on a serving plate.
  7. Top generously with whipped cream.
  8. Drizzle with warm caramel sauce (and melted Biscoff spread if using).
  9. Sprinkle with crushed Biscoff biscuits and garnish with whole biscuits.
  10. Serve immediately while warm.
