Lotus Biscoff Caramel Pancakes
Ingredients (Serves 4)
For the Pancakes
- 2 cups (250 g) all-purpose flour
- 2 tbsp sugar
- 2 tsp baking powder
- ½ tsp salt
- 2 eggs
- 1¾ cups (420 ml) milk
- 2 tbsp melted butter
- 1 tsp vanilla extract
Toppings
- 1 cup whipped cream
- ½ cup caramel sauce
- 6–8 Lotus Biscoff biscuits
- 2 tbsp crushed Biscoff crumbs
- Optional: 2 tbsp melted Biscoff spread
👩🍳 Instructions
- In a bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, whisk the eggs, milk, vanilla, and melted butter.
- Combine the wet and dry ingredients until just mixed.
- Heat a lightly buttered non-stick pan over medium heat.
- Pour about ¼ cup of batter for each pancake and cook until bubbles form. Flip and cook until golden.
- Stack the pancakes on a serving plate.
- Top generously with whipped cream.
- Drizzle with warm caramel sauce (and melted Biscoff spread if using).
- Sprinkle with crushed Biscoff biscuits and garnish with whole biscuits.
- Serve immediately while warm.
