Lemon Raspberry Cheesecake Bars
Ingredients
For the Crust
- 200 g graham cracker crumbs
- 90 g melted butter
- 2 tbsp sugar
For the Filling
- 500 g cream cheese, softened
- 120 g sugar
- 2 eggs
- 120 ml sour cream
- Juice and zest of 1 lemon
- 150 g fresh raspberries
Instructions
- Preheat oven to 175°C (350°F).
- Mix graham cracker crumbs, butter, and sugar. Press into a lined baking pan.
- Bake for 10 minutes and let cool slightly.
- Beat cream cheese and sugar until smooth.
- Add eggs one at a time, then sour cream, lemon juice, and zest.
- Fold in raspberries gently.
- Pour over the crust and bake for 30–35 minutes.
- Cool completely, then chill for at least 3 hours before slicing.
