Lemon Raspberry Cheesecake Bars

Ingredients

For the Crust

  • 200 g graham cracker crumbs
  • 90 g melted butter
  • 2 tbsp sugar

For the Filling

  • 500 g cream cheese, softened
  • 120 g sugar
  • 2 eggs
  • 120 ml sour cream
  • Juice and zest of 1 lemon
  • 150 g fresh raspberries

Instructions

  1. Preheat oven to 175°C (350°F).
  2. Mix graham cracker crumbs, butter, and sugar. Press into a lined baking pan.
  3. Bake for 10 minutes and let cool slightly.
  4. Beat cream cheese and sugar until smooth.
  5. Add eggs one at a time, then sour cream, lemon juice, and zest.
  6. Fold in raspberries gently.
  7. Pour over the crust and bake for 30–35 minutes.
  8. Cool completely, then chill for at least 3 hours before slicing.
