Garlic Butter Steak and Crispy Potatoes

Ingredients

  • 2 ribeye or sirloin steaks
  • 500 g baby potatoes, halved
  • 3 tbsp olive oil
  • 3 tbsp butter
  • 5 garlic cloves, smashed
  • 2 fresh rosemary sprigs
  • 2 fresh thyme sprigs
  • 1 tsp smoked paprika
  • Salt and black pepper to taste
  • Fresh parsley, chopped

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Toss the potatoes with olive oil, paprika, salt, and pepper. Roast for 30–35 minutes until crispy and golden.
  3. Pat the steaks dry and season generously with salt and pepper.
  4. Heat a cast-iron skillet over high heat with a little olive oil.
  5. Sear the steaks for 3–4 minutes per side (or to your preferred doneness).
  6. Add butter, garlic, rosemary, and thyme. Baste the steaks with the melted butter for 2 minutes.
  7. Let the steaks rest for 5 minutes before slicing.
  8. Serve with the crispy roasted potatoes and drizzle with the garlic herb butter.
