Creamy Roasted Tomato Basil Soup

Ingredients

  • 2 lbs (900 g) ripe tomatoes, halved
  • 1 onion, quartered
  • 6 garlic cloves
  • 2 tbsp olive oil
  • 2 cups vegetable broth
  • ½ cup heavy cream
  • ¼ cup fresh basil leaves
  • 1 tsp sugar (optional)
  • Salt and black pepper, to taste
  • Fresh Parmesan cheese, for garnish
  • Fresh basil leaves, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the tomatoes, onion, and garlic on a baking tray. Drizzle with olive oil and season with salt and pepper.
  3. Roast for 35–40 minutes until the vegetables are soft and slightly caramelized.
  4. Transfer the roasted vegetables to a blender. Add the vegetable broth and fresh basil, then blend until smooth.
  5. Pour the soup into a pot over medium heat. Stir in the heavy cream and sugar (if using).
  6. Simmer for 5–10 minutes, adjusting the seasoning to taste.
  7. Serve hot with grated Parmesan, fresh basil, and crusty bread.
