Cheesy Beef & Spinach Penne

Ingredients (Serves 4)
  • 12 oz (340 g) penne pasta
  • 1 lb (450 g) lean ground beef
  • 2 tbsp olive oil
  • 1 small onion, finely diced
  • 3 garlic cloves, minced
  • 2 cups fresh spinach
  • 2 cups marinara sauce
  • 1 tbsp tomato paste
  • 1 tsp Italian seasoning

  • Salt and black pepper, to taste
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)
Instructions

  5. Add the spinach and cook until wilted.
  6. Fold in the cooked penne and mix until evenly coated with the sauce.
  7. Sprinkle the mozzarella over the pasta and let it melt. Finish with grated Parmesan.
