Cheesy Beef & Spinach Penne
Ingredients (Serves 4)
- 12 oz (340 g) penne pasta
- 1 lb (450 g) lean ground beef
- 2 tbsp olive oil
- 1 small onion, finely diced
- 3 garlic cloves, minced
- 2 cups fresh spinach
- 2 cups marinara sauce
- 1 tbsp tomato paste
- 1 tsp Italian seasoning
- ½ tsp paprika
- Salt and black pepper, to taste
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the penne according to the package directions until al dente. Drain and set aside.
- Heat the olive oil in a large skillet over medium heat. Sauté the onion until soft, then add the garlic and cook for 30 seconds.
- Add the ground beef and cook until browned, breaking it apart as it cooks. Drain any excess fat.
- Stir in the tomato paste, marinara sauce, Italian seasoning, paprika, salt, and pepper. Simmer for 5 minutes.
- Add the spinach and cook until wilted.
- Fold in the cooked penne and mix until evenly coated with the sauce.
- Sprinkle the mozzarella over the pasta and let it melt. Finish with grated Parmesan.
- Garnish with fresh parsley and serve immediately.
