Banana Chocolate Molehill Muffins
Ingredients
For the Chocolate Muffins
- 2 cups (250 g) all-purpose flour
- ½ cup (50 g) unsweetened cocoa powder
- 2 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup (115 g) unsalted butter, melted
- ¾ cup (150 g) granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- ¾ cup (180 ml) milk
For the Filling
- 6 small bananas
- 1½ cups (360 ml) heavy whipping cream
- 3 tbsp powdered sugar
- 1 tsp vanilla extract
For the Topping
- Chocolate shavings
- Chocolate curls
- Chocolate sprinkles
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin pan with paper liners.
- Mix the flour, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, whisk together the butter, sugar, eggs, vanilla, and milk.
- Combine the wet and dry ingredients until just mixed.
- Fill the muffin cups about ¾ full and bake for 20–25 minutes.
- Allow the muffins to cool completely.
- Cut a small hole from the center of each muffin and gently remove a little cake.
- Place half of a small banana inside each muffin.
- Whip the heavy cream with powdered sugar and vanilla until stiff peaks form.
- Pipe whipped cream over each banana.
- Crumble the removed cake pieces over the cream to create the classic “molehill” look.
- Finish with chocolate shavings and refrigerate for 30 minutes before serving.
