Strawberry Banana Cheesecake

Ingredients

For the Crust

  • 250 g graham cracker crumbs
  • 100 g unsalted butter, melted
  • 2 tbsp granulated sugar

For the Cheesecake Filling

  • 500 g cream cheese, softened
  • 200 ml heavy whipping cream
  • 150 g powdered sugar
  • 1 tsp vanilla extract
  • 2 tsp lemon juice
  • 8 g unflavored gelatin (optional, for extra stability)

Fruit Layer

  • 250 g fresh strawberries, sliced
  • 2 ripe bananas, sliced

Topping

  • 200 ml whipped cream
  • Fresh strawberries
  • Banana slices
  • Strawberry sauce or syrup (optional)
  • Crushed graham crackers for garnish

Instructions

1. Make the Crust

  1. Combine graham cracker crumbs, melted butter, and sugar.
  2. Press into the bottom and sides of a 9-inch (23 cm) springform pan.
  3. Chill for 20 minutes.

2. Prepare the Filling

  1. Beat the cream cheese until smooth.
  2. Add powdered sugar, vanilla, and lemon juice.
  3. Whip the heavy cream until stiff peaks form.
  4. Fold the whipped cream into the cream cheese mixture.
  5. If using gelatin, dissolve it according to package directions and fold it into the filling.

3. Assemble

  1. Spread a thin layer of cheesecake filling over the crust.
  2. Arrange sliced strawberries and bananas.
  3. Cover with more cheesecake filling.
  4. Repeat with another layer of fruit if desired.
  5. Smooth the top.

4. Chill

Refrigerate for 6–8 hours, preferably overnight.

5. Decorate

Pipe whipped cream on top and garnish with fresh strawberries, banana slices, crushed graham crackers, and a drizzle of strawberry sauce before serving.
