No-Bake Almond Caramel Tiramisu (Bienenstich Tiramisu)
Ingredients
For the Cream
- 500 g mascarpone
- 500 ml heavy whipping cream
- 2 packets (about 80 g) vanilla pudding cream powder (Paradies Creme Vanilla or similar instant vanilla dessert mix)
- 250 ml milk (for dipping the ladyfingers)
- 2 packs ladyfingers (Savoiardi)
For the Almond Caramel Topping
- 200 g sliced almonds
- 120 g granulated sugar
- 100 g unsalted butter
- 150 ml heavy cream
Instructions
1. Prepare the Cream
- Beat the heavy cream until it begins to thicken.
- Add the mascarpone and vanilla cream powder.
- Continue beating until smooth, thick, and fluffy.
2. Assemble the Dessert
- Quickly dip each ladyfinger into the milk.
- Arrange a layer of ladyfingers in a 23 × 23 cm (9 × 9-inch) baking dish.
- Spread half of the cream mixture over the ladyfingers.
- Add another layer of milk-dipped ladyfingers.
- Finish with the remaining cream and smooth the top.
3. Make the Almond Caramel
- Toast the sliced almonds in a dry skillet until lightly golden. Remove and set aside.
- Add the sugar to the skillet without stirring.
- Once it starts turning golden, gently stir.
- Add the butter and stir until melted.
- Slowly pour in the heavy cream while stirring continuously.
- Continue cooking over medium heat until the caramel becomes smooth and creamy.
- Let it cool for a few minutes, then stir in the toasted almonds.
4. Finish
- Spread the almond caramel evenly over the cream layer.
- Refrigerate overnight (or at least 8 hours).
- Slice and serve chilled.
