Creamy Garlic Mushroom Chicken

Ingredients (Serves 4)

  • 2 boneless, skinless chicken breasts, sliced into cutlets
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 8 oz (250 g) mushrooms, sliced
  • 4 garlic cloves, minced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup grated Parmesan cheese
  • 1 tsp paprika
  • 1 tsp dried thyme
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken with salt, black pepper, and paprika.
  2. Heat the olive oil in a large skillet over medium-high heat. Cook the chicken for 4–5 minutes per side until golden and fully cooked. Remove and set aside.
  3. In the same skillet, melt the butter and sauté the mushrooms until golden brown.
  4. Add the minced garlic and cook for about 30 seconds until fragrant.
  5. Pour in the chicken broth and let it simmer for 2 minutes.
  6. Stir in the heavy cream, Parmesan cheese, and dried thyme. Cook until the sauce becomes smooth and creamy.
  7. Return the chicken to the skillet and simmer for 3–5 minutes, allowing it to absorb the flavors.
  8. Garnish with fresh parsley and serve hot with pasta, mashed potatoes, or steamed rice.
