Apricot Crumb Cake
Ingredients
Cake Batter
- 3 large eggs
- 200 g granulated sugar
- 180 ml vegetable oil
- 240 g plain yogurt
- 1 tsp vanilla extract (or 1 packet vanilla sugar)
- 250 g all-purpose flour
- 10 g baking powder
- 15 fresh apricots, halved and pitted
Crumb Topping
- 80 g all-purpose flour
- 40 g granulated sugar
- 40 g cold unsalted butter, cubed
Instructions
1. Prepare the Batter
- Preheat the oven to 175°C (350°F).
- Grease and line a 20 × 20 cm (8 × 8 inch) baking pan.
- Beat the eggs and sugar until pale and fluffy.
- Add the vegetable oil, yogurt, and vanilla, then mix until smooth.
- Sift together the flour and baking powder.
- Fold the dry ingredients into the wet ingredients until just combined.
- Pour the batter into the prepared pan.
2. Add the Apricots
- Arrange the halved apricots, cut side up, evenly over the batter.
- Gently press them slightly into the batter.
3. Make the Crumble
- Combine the flour and sugar in a bowl.
- Rub in the cold butter with your fingertips until coarse crumbs form.
- Sprinkle the crumble evenly over the apricots.
4. Bake
- Bake for 55–60 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
- Allow the cake to cool for 15 minutes before slicing.
5. Serve
Dust with powdered sugar if desired and enjoy warm or at room temperature with tea, coffee, or a scoop of vanilla ice cream.
