Apricot Crumb Cake

Ingredients

Cake Batter

  • 3 large eggs
  • 200 g granulated sugar
  • 180 ml vegetable oil
  • 240 g plain yogurt
  • 1 tsp vanilla extract (or 1 packet vanilla sugar)
  • 250 g all-purpose flour
  • 10 g baking powder
  • 15 fresh apricots, halved and pitted

Crumb Topping

  • 80 g all-purpose flour
  • 40 g granulated sugar
  • 40 g cold unsalted butter, cubed

Instructions

1. Prepare the Batter

  1. Preheat the oven to 175°C (350°F).
  2. Grease and line a 20 × 20 cm (8 × 8 inch) baking pan.
  3. Beat the eggs and sugar until pale and fluffy.
  4. Add the vegetable oil, yogurt, and vanilla, then mix until smooth.
  5. Sift together the flour and baking powder.
  6. Fold the dry ingredients into the wet ingredients until just combined.
  7. Pour the batter into the prepared pan.

2. Add the Apricots

  1. Arrange the halved apricots, cut side up, evenly over the batter.
  2. Gently press them slightly into the batter.

3. Make the Crumble

  1. Combine the flour and sugar in a bowl.
  2. Rub in the cold butter with your fingertips until coarse crumbs form.
  3. Sprinkle the crumble evenly over the apricots.

4. Bake

  1. Bake for 55–60 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
  2. Allow the cake to cool for 15 minutes before slicing.

5. Serve

Dust with powdered sugar if desired and enjoy warm or at room temperature with tea, coffee, or a scoop of vanilla ice cream.
