Peach & Blueberry Cream Cheese Pastry
Ingredients
- 1 sheet puff pastry, thawed
- 120g cream cheese, softened
- 2 tbsp sugar
- 1 tsp vanilla extract
- 2 peaches, thinly sliced
- ½ cup blueberries
- 1 egg (for egg wash)
- Powdered sugar for garnish
Instructions
- Preheat the oven to 200°C (400°F).
- Cut the puff pastry into squares and place them on a baking tray lined with parchment paper.
- Mix the cream cheese, sugar, and vanilla until smooth.
- Spread a spoonful of the cream cheese mixture in the center of each pastry square.
- Arrange the peach slices on top and scatter the blueberries around them.
- Fold the edges slightly and brush them with beaten egg.
- Bake for 18–22 minutes until the pastry is golden and flaky.
- Let cool for a few minutes, then dust with powdered sugar before serving.
