Ultimate Oven-Roasted French Garlic Chicken
Ingredients (Serves 4)
- 4 bone-in, skin-on chicken thighs or leg quarters
- 12–15 whole garlic cloves, peeled
- 8 small shallots or pearl onions, peeled
- 3 tbsp unsalted butter, melted
- 2 tbsp olive oil
- 1 tbsp Dijon mustard
- 1 tbsp fresh thyme leaves (or 1 tsp dried thyme)
- 1 tsp rosemary, chopped
- ½ tsp paprika
- Salt and black pepper, to taste
- ½ cup (120 ml) chicken broth
- 1 tbsp lemon juice
Instructions
- Preheat the oven to 400°F (200°C).
- Pat the chicken dry and season generously with salt, pepper, paprika, thyme, and rosemary.
- Whisk together the melted butter, olive oil, Dijon mustard, and lemon juice.
- Arrange the chicken, garlic cloves, and shallots in a baking dish.
- Pour the butter mixture over everything and add the chicken broth.
- Roast for 45–55 minutes, basting the chicken once or twice, until the skin is deep golden and crispy and the internal temperature reaches 165°F (74°C).
- Spoon the pan juices over the chicken before serving. Enjoy with mashed potatoes, roasted vegetables, or crusty French bread.
