Ultimate Oven-Roasted French Garlic Chicken

Ingredients (Serves 4)
  • 4 bone-in, skin-on chicken thighs or leg quarters
  • 12–15 whole garlic cloves, peeled
  • 8 small shallots or pearl onions, peeled
  • 3 tbsp unsalted butter, melted
  • 2 tbsp olive oil
  • 1 tbsp Dijon mustard
  • 1 tbsp fresh thyme leaves (or 1 tsp dried thyme)
  • 1 tsp rosemary, chopped
  • ½ tsp paprika
  • Salt and black pepper, to taste
  • ½ cup (120 ml) chicken broth
  • 1 tbsp lemon juice
Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Pat the chicken dry and season generously with salt, pepper, paprika, thyme, and rosemary.
  3. Whisk together the melted butter, olive oil, Dijon mustard, and lemon juice.
  4. Arrange the chicken, garlic cloves, and shallots in a baking dish.
  5. Pour the butter mixture over everything and add the chicken broth.
  6. Roast for 45–55 minutes, basting the chicken once or twice, until the skin is deep golden and crispy and the internal temperature reaches 165°F (74°C).
  7. Spoon the pan juices over the chicken before serving. Enjoy with mashed potatoes, roasted vegetables, or crusty French bread.
