Garlic Butter Shrimp with Cherry Tomatoes

Ingredients (Serves 4)
  • 1½ lbs (700 g) large shrimp, peeled and deveined (tails on if desired)
  • 3 tbsp unsalted butter
  • 1 tbsp olive oil
  • 5 garlic cloves, minced
  • 2 cups (250 g) cherry tomatoes, halved
  • 1 tsp paprika
  • ½ tsp red pepper flakes (optional)
  • Salt and black pepper, to taste
  • 1 tbsp fresh lemon juice
  • 2 tbsp fresh parsley, chopped
  • Fresh thyme (optional, for garnish)
Instructions
  1. Season the shrimp with paprika, salt, and black pepper.
  2. Heat the olive oil and butter in a large skillet over medium heat.
  3. Add the garlic and sauté for about 30 seconds until fragrant.
  4. Add the shrimp and cook for 2–3 minutes per side, until pink and fully cooked.
  5. Stir in the cherry tomatoes and cook for another 3–4 minutes until they begin to soften.
  6. Add the lemon juice and red pepper flakes, if using.
  7. Sprinkle with fresh parsley and thyme. Serve immediately with crusty bread, pasta, or steamed rice.
