Garlic Butter Shrimp with Cherry Tomatoes
Ingredients (Serves 4)
- 1½ lbs (700 g) large shrimp, peeled and deveined (tails on if desired)
- 3 tbsp unsalted butter
- 1 tbsp olive oil
- 5 garlic cloves, minced
- 2 cups (250 g) cherry tomatoes, halved
- 1 tsp paprika
- ½ tsp red pepper flakes (optional)
- Salt and black pepper, to taste
- 1 tbsp fresh lemon juice
- 2 tbsp fresh parsley, chopped
- Fresh thyme (optional, for garnish)
Instructions
- Season the shrimp with paprika, salt, and black pepper.
- Heat the olive oil and butter in a large skillet over medium heat.
- Add the garlic and sauté for about 30 seconds until fragrant.
- Add the shrimp and cook for 2–3 minutes per side, until pink and fully cooked.
- Stir in the cherry tomatoes and cook for another 3–4 minutes until they begin to soften.
- Add the lemon juice and red pepper flakes, if using.
- Sprinkle with fresh parsley and thyme. Serve immediately with crusty bread, pasta, or steamed rice.
