Garlic Butter Beef Tips with Roasted Potatoes
Ingredients
- 600 g beef sirloin, cut into bite-sized pieces
- 500 g baby potatoes, halved
- 3 tbsp olive oil
- 3 tbsp butter
- 5 garlic cloves, minced
- 1 tsp smoked paprika
- 1 tsp dried thyme
- 1 tsp rosemary
- 120 ml beef broth
- Salt and black pepper to taste
- Fresh parsley, chopped
Instructions
- Preheat the oven to 200°C (400°F).
- Toss the potatoes with 1 tablespoon olive oil, paprika, salt, and pepper. Roast for 30–35 minutes until golden.
- Season the beef with salt and pepper.
- Heat the remaining olive oil in a large skillet over high heat.
- Sear the beef for 2–3 minutes until browned. Remove and set aside.
- Melt the butter in the same skillet, then sauté the garlic, thyme, and rosemary for 30 seconds.
- Add the beef broth and simmer for 2 minutes.
- Return the beef to the skillet and coat with the garlic butter sauce.
- Serve with the roasted potatoes and garnish with fresh parsley.
