Chicken Thighs and Potatoes

Ingredients

  • 6 chicken thighs (skin-on, bone-in)
  • 700 g baby potatoes, halved
  • 3 tbsp olive oil
  • 4 garlic cloves, minced
  • 1 tbsp honey
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 1 tsp rosemary
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 200°C (400°F).
  2. In a large bowl, mix olive oil, garlic, honey, paprika, thyme, rosemary, salt, and pepper.
  3. Add chicken thighs and potatoes, tossing well to coat.
  4. Arrange everything in a baking dish, skin side up.
  5. Bake for 45–55 minutes, until the chicken is golden brown and the potatoes are tender.
  6. For extra crispiness, broil for 3–5 minutes at the end.
  7. Garnish with fresh parsley and serve warm.
