Chicken Thighs and Potatoes

Ingredients
- 6 chicken thighs (skin-on, bone-in)
- 700 g baby potatoes, halved
- 3 tbsp olive oil
- 4 garlic cloves, minced
- 1 tbsp honey
- 1 tsp paprika
- 1 tsp dried thyme
- 1 tsp rosemary
- Salt and black pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat oven to 200°C (400°F).
- In a large bowl, mix olive oil, garlic, honey, paprika, thyme, rosemary, salt, and pepper.
- Add chicken thighs and potatoes, tossing well to coat.
- Arrange everything in a baking dish, skin side up.
- Bake for 45–55 minutes, until the chicken is golden brown and the potatoes are tender.
- For extra crispiness, broil for 3–5 minutes at the end.
- Garnish with fresh parsley and serve warm.
