Avocado Nest with Garlic Shrimp & Toasted Pine Nuts
Ingredients
For the Avocado Cream
- 2 ripe avocados
- 2 tbsp extra virgin olive oil
- 1 small garlic clove
- Juice of ½ lemon
- 2 tbsp fresh parsley, chopped
- Salt, to taste
- Black pepper, to taste
For the Shrimp
- 6 large shrimp, peeled and deveined
- 1 tbsp extra virgin olive oil
- 1 tbsp fresh parsley, chopped
- ½ tsp dried oregano
- Salt and black pepper, to taste
- 1 tbsp breadcrumbs
- A few drops of lemon juice
Garnish
- 20 g pine nuts
- Extra virgin olive oil for drizzling
Instructions
- In a food processor, blend the avocados, olive oil, parsley, garlic, lemon juice, salt, and pepper until smooth and creamy.
- Pat the shrimp dry and season with olive oil, parsley, oregano, salt, pepper, lemon juice, and breadcrumbs.
- Heat a skillet over medium-high heat and cook the shrimp for 2–3 minutes per side, until golden and cooked through.
- Toast the pine nuts in a dry skillet for about 2 minutes, stirring frequently until lightly golden.
- Spread the avocado cream onto a serving plate, creating a nest shape with the back of a spoon.
- Arrange the cooked shrimp on top of the avocado cream.
- Sprinkle with the toasted pine nuts and drizzle with a little parsley-garlic infused olive oil, if desired.
- Chill for 20 minutes before serving for the best flavor.
