Cheesy Beef Tortilla Triangles

Ingredients

Beef Filling

  • 500 g ground beef
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • ½ red bell pepper, diced
  • 3 tbsp tomato paste
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp chili flakes (optional)
  • Salt and black pepper, to taste
  • Fresh parsley, chopped

Assembly

  • 3 large flour tortillas, cut in half
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese

Garlic Butter

  • 3 tbsp melted butter
  • 2 garlic cloves, minced
  • 1 tsp dried parsley

Instructions

  1. Heat the olive oil in a skillet over medium heat.
  2. Sauté the onion and garlic for 1–2 minutes.
  3. Add the ground beef and cook until browned.
  4. Stir in the bell pepper, tomato paste, smoked paprika, cumin, chili flakes, salt, and pepper.
  5. If needed, add a splash of water and simmer until the filling is rich and thick.
  6. Preheat the oven to 400°F (200°C).
  7. Place a little mozzarella in the center of each tortilla half.
  8. Add 2–3 tablespoons of the beef filling.
  9. Fold each tortilla into a triangle and press the edges gently.
  10. Brush a baking dish with the garlic butter.
  11. Arrange the tortilla triangles in the dish.
  12. Brush the tops with more garlic butter.
  13. Sprinkle with the remaining mozzarella and cheddar cheese.
  14. Bake for 15–20 minutes, until the tortillas are crispy and the cheese is melted and golden.
  15. Garnish with chopped parsley and serve hot.
