Cheesy Beef Tortilla Triangles

Ingredients
Beef Filling
- 500 g ground beef
- 1 onion, finely chopped
- 2 garlic cloves, minced
- ½ red bell pepper, diced
- 3 tbsp tomato paste
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp ground cumin
- 1 tsp chili flakes (optional)
- Salt and black pepper, to taste
- Fresh parsley, chopped
Assembly
- 3 large flour tortillas, cut in half
- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese
Garlic Butter
- 3 tbsp melted butter
- 2 garlic cloves, minced
- 1 tsp dried parsley
Instructions
- Heat the olive oil in a skillet over medium heat.
- Sauté the onion and garlic for 1–2 minutes.
- Add the ground beef and cook until browned.
- Stir in the bell pepper, tomato paste, smoked paprika, cumin, chili flakes, salt, and pepper.
- If needed, add a splash of water and simmer until the filling is rich and thick.
- Preheat the oven to 400°F (200°C).
- Place a little mozzarella in the center of each tortilla half.
- Add 2–3 tablespoons of the beef filling.
- Fold each tortilla into a triangle and press the edges gently.
- Brush a baking dish with the garlic butter.
- Arrange the tortilla triangles in the dish.
- Brush the tops with more garlic butter.
- Sprinkle with the remaining mozzarella and cheddar cheese.
- Bake for 15–20 minutes, until the tortillas are crispy and the cheese is melted and golden.
- Garnish with chopped parsley and serve hot.
