Cheesy Ground Beef Burritos
Ingredients
- 4 large flour tortillas
- 1 lb (450–500 g) ground beef
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 tbsp tomato paste
- 1 tsp paprika
- 1 tsp ground cumin
- ½ tsp black pepper
- ½ tsp chili flakes (optional)
- Salt, to taste
- 1 cup shredded mozzarella cheese
- ½ cup shredded cheddar cheese
- 2 tbsp olive oil
- Fresh cilantro or parsley, chopped (for garnish)
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Sauté the onion until softened, then add the garlic and cook for 30 seconds.
- Add the ground beef and cook until browned, breaking it apart as it cooks.
- Stir in the tomato paste, paprika, cumin, salt, black pepper, and chili flakes. Cook for 3–5 minutes until well combined.
- Spoon the beef mixture onto each tortilla and top generously with mozzarella and cheddar cheese.
- Roll the tortillas tightly into burritos.
- Place them in a baking dish, sprinkle with extra mozzarella, and bake at 400°F (200°C) for 8–10 minutes, or until the cheese is melted and bubbly.
- Garnish with fresh cilantro or parsley and serve hot with salsa, sour cream, or guacamole.
