Cheesy Ground Beef Burritos

Ingredients

  • 4 large flour tortillas
  • 1 lb (450–500 g) ground beef
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 tbsp tomato paste
  • 1 tsp paprika
  • 1 tsp ground cumin
  • ½ tsp black pepper
  • ½ tsp chili flakes (optional)
  • Salt, to taste
  • 1 cup shredded mozzarella cheese
  • ½ cup shredded cheddar cheese
  • 2 tbsp olive oil
  • Fresh cilantro or parsley, chopped (for garnish)

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Sauté the onion until softened, then add the garlic and cook for 30 seconds.
  3. Add the ground beef and cook until browned, breaking it apart as it cooks.
  4. Stir in the tomato paste, paprika, cumin, salt, black pepper, and chili flakes. Cook for 3–5 minutes until well combined.
  5. Spoon the beef mixture onto each tortilla and top generously with mozzarella and cheddar cheese.
  6. Roll the tortillas tightly into burritos.
  7. Place them in a baking dish, sprinkle with extra mozzarella, and bake at 400°F (200°C) for 8–10 minutes, or until the cheese is melted and bubbly.
  8. Garnish with fresh cilantro or parsley and serve hot with salsa, sour cream, or guacamole.
