NY Strip Steak with Creamy Mushroom Sauce

Ingredients
For the Steak
- 2 NY strip steaks (about 10 oz / 280 g each)
- Salt and black pepper
- 1 tbsp olive oil
- 2 tbsp butter
- 3 garlic cloves, smashed
- Fresh thyme or rosemary (optional)
For the Mashed Potatoes
- 2 lbs (900 g) Yukon Gold potatoes, peeled
- 4 tbsp butter
- ½ cup heavy cream, warmed
- Salt and pepper
For the Creamy Mushroom Sauce
- 2 tbsp butter
- 8 oz (225 g) mushrooms, sliced
- 2 garlic cloves, minced
- 1 tsp Dijon mustard
- ½ cup beef broth
- ¾ cup heavy cream
- ¼ cup Parmesan cheese (optional)
- 1 tsp fresh thyme
- Salt and pepper
Instructions
- Boil the potatoes until fork tender. Drain and mash with butter and warm cream. Season with salt and pepper.
- Pat the steaks dry and season generously with salt and pepper.
- Heat olive oil in a skillet over high heat. Sear steaks for 3–4 minutes per side (or until your preferred doneness). During the last minute, add butter, garlic, and thyme, then spoon the melted butter over the steaks. Let them rest.
- In the same skillet, melt butter and sauté mushrooms until browned.
- Add garlic and cook for 30 seconds.
- Stir in Dijon mustard and beef broth, scraping up the browned bits.
- Add heavy cream and thyme. Simmer until thickened. Stir in Parmesan if using.
- Spoon mashed potatoes onto plates, top with sliced steak, then finish with the creamy mushroom sauce.
