Lime Meringue Bars

These Lime Meringue Bars feature a buttery shortbread crust, a silky smooth lime filling, and a light, toasted meringue topping. They’re the perfect balance of sweet and tangy, making them an elegant dessert for parties, holidays, or afternoon treats.

Ingredients

Shortbread Crust

  • 1½ cups (190 g) all-purpose flour
  • ½ cup (115 g) unsalted butter, softened
  • ¼ cup (50 g) granulated sugar
  • ¼ tsp salt

Lime Filling

  • 1 can (14 oz / 397 g) sweetened condensed milk
  • 4 large egg yolks
  • ½ cup (120 ml) fresh lime juice
  • 1 tbsp lime zest

Meringue

  • 4 large egg whites
  • ½ cup (100 g) granulated sugar
  • ¼ tsp cream of tartar
  • 1 tsp vanilla extract

Instructions

1. Prepare the Crust

  1. Preheat the oven to 350°F (175°C).
  2. Mix the flour, sugar, and salt.
  3. Cut in the butter until crumbly.
  4. Press the mixture firmly into an 8×8-inch (20×20 cm) baking pan lined with parchment paper.
  5. Bake for 18–20 minutes, until lightly golden.

2. Make the Lime Filling

  1. Whisk together the condensed milk, egg yolks, lime juice, and lime zest until smooth.
  2. Pour over the warm crust.
  3. Bake for 12–15 minutes, until just set.
  4. Allow to cool slightly.

3. Make the Meringue

  1. Beat the egg whites with the cream of tartar until soft peaks form.
  2. Gradually add the sugar while beating until stiff, glossy peaks form.
  3. Mix in the vanilla.

4. Assemble

  1. Spread or pipe the meringue over the cooled lime filling.
  2. Toast the meringue with a kitchen torch, or place under the oven broiler for 1–2 minutes until golden.
  3. Chill for at least 2 hours before slicing into bars.
