Grilled Chicken Salad Bowl
Ingredients
- 2 boneless chicken breasts
- 4 cups mixed lettuce
- 1 cucumber, diced
- 2 tomatoes, diced
- 1 carrot, shredded
- ¼ red onion, sliced
- Fresh cilantro or parsley
- 1 cup cooked couscous or rice
For the Chicken Marinade
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 2 garlic cloves, minced
- 1 tsp paprika
- ½ tsp cumin
- Salt and black pepper
Dressing
- 3 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp honey
- 1 tsp Dijon mustard
- Salt and pepper
Instructions
- Marinate the chicken for at least 30 minutes.
- Grill for 5–6 minutes per side until fully cooked.
- Slice the chicken into strips.
- Arrange the lettuce, cucumber, tomatoes, carrot, onion, and couscous in a large bowl.
- Whisk together the dressing ingredients and drizzle over the salad.
- Top with the grilled chicken and serve immediately.
