Oven-Baked Chicken Shish Kebabs
Ingredients
- 700 g chicken thighs, cut into cubes
- 1 tbsp tomato paste
- ½ tea glass (about 60 ml) vegetable oil
- 1 cup milk
- 3 garlic cloves, minced
- 1 tsp dried thyme
- 1 tsp curry powder
- 1 tsp black pepper
- 1 tsp paprika
- Salt, to taste
For the Skewers
- Green bell pepper, cut into chunks
- Red bell pepper, cut into chunks
- Red onion, cut into chunks
- Wooden or metal skewers
Instructions
- In a large bowl, whisk together the tomato paste, vegetable oil, milk, garlic, thyme, curry powder, black pepper, paprika, and salt.
- Add the chicken cubes and coat well with the marinade.
- Cover and refrigerate for at least 4 hours (overnight is even better).
- Thread the marinated chicken onto skewers, alternating with the bell peppers and red onion.
- Arrange the skewers on a parchment-lined baking tray.
- Bake in a preheated oven at 200°C (400°F) for 30–40 minutes, turning halfway through, until the chicken is cooked through and lightly charred.
- For extra color, broil for the last 2–3 minutes.
Serve hot with rice, grilled vegetables, salad, garlic yogurt sauce, or warm pita bread.
