Oven-Baked Chicken Shish Kebabs

Ingredients

  • 700 g chicken thighs, cut into cubes
  • 1 tbsp tomato paste
  • ½ tea glass (about 60 ml) vegetable oil
  • 1 cup milk
  • 3 garlic cloves, minced
  • 1 tsp dried thyme
  • 1 tsp curry powder
  • 1 tsp black pepper
  • 1 tsp paprika
  • Salt, to taste

For the Skewers

  • Green bell pepper, cut into chunks
  • Red bell pepper, cut into chunks
  • Red onion, cut into chunks
  • Wooden or metal skewers

Instructions

  1. In a large bowl, whisk together the tomato paste, vegetable oil, milk, garlic, thyme, curry powder, black pepper, paprika, and salt.
  2. Add the chicken cubes and coat well with the marinade.
  3. Cover and refrigerate for at least 4 hours (overnight is even better).
  4. Thread the marinated chicken onto skewers, alternating with the bell peppers and red onion.
  5. Arrange the skewers on a parchment-lined baking tray.
  6. Bake in a preheated oven at 200°C (400°F) for 30–40 minutes, turning halfway through, until the chicken is cooked through and lightly charred.
  7. For extra color, broil for the last 2–3 minutes.

Serve hot with rice, grilled vegetables, salad, garlic yogurt sauce, or warm pita bread.
