For the pasta:
- 12 oz (340 g) spaghetti
- 2 tbsp olive oil
- 4 garlic cloves, minced
- 2 cups cherry tomatoes
- 1 can (28 oz / 800 g) crushed tomatoes
- 1 tsp Italian seasoning
- Β½ tsp red pepper flakes
- Β½ tsp salt
- ΒΌ tsp black pepper
- Β½ tsp sugar, optional
- Β½ cup reserved pasta water
- Β½ cup fresh basil, chopped
- 1 ball burrata cheese
- 2 tbsp grated Parmesan, optional

- Cook the spaghetti in a large pot of salted boiling water until al dente. Reserve Β½ cup of pasta water, then drain.
- Heat olive oil in a large skillet over medium heat.
- Add the garlic and sautΓ© for about 30 seconds until fragrant.
- Add the cherry tomatoes and cook for 4β5 minutes until softened and slightly blistered.
- Stir in the crushed tomatoes, Italian seasoning, red pepper flakes, salt, black pepper, and optional sugar.
- Simmer the sauce for 10β15 minutes, stirring occasionally.
- Add the cooked spaghetti to the sauce and toss well.
- Gradually add reserved pasta water until the sauce becomes smooth and glossy and coats the pasta.
- Stir in the fresh basil.
- Transfer the pasta to a serving plate and place the burrata in the center.
- Garnish with fresh basil, red pepper flakes, and Parmesan if desired.
