Smothered Pork Chops with Onion Gravy

Ingredients

For the Pork Chops

  • 4 bone-in pork chops
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • Salt and black pepper, to taste

For the Onion Gravy

  • 2 large onions, thinly sliced
  • 3 cloves garlic, minced
  • 2 tbsp all-purpose flour
  • 2 cups beef broth
  • ½ cup heavy cream
  • 1 tsp Worcestershire sauce
  • 1 tsp fresh thyme
  • 1 tbsp butter

For Serving

  • Creamy mashed potatoes
  • Fresh parsley, chopped

Instructions

  1. Season the pork chops with garlic powder, onion powder, paprika, salt, and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the pork chops for 4–5 minutes per side until golden. Remove and set aside.
  3. In the same skillet, melt the butter and cook the onions for 10–12 minutes until caramelized.
  4. Add the garlic and cook for 30 seconds.
  5. Sprinkle in the flour and stir for 1 minute.
  6. Gradually whisk in the beef broth, then add the Worcestershire sauce, thyme, and heavy cream. Simmer until the gravy thickens.
  7. Return the pork chops to the skillet and simmer for 8–10 minutes until fully cooked and coated in the rich onion gravy.
  8. Serve over creamy mashed potatoes and garnish with chopped parsley.
