Smothered Pork Chops with Onion Gravy
Ingredients
For the Pork Chops
- 4 bone-in pork chops
- 2 tbsp olive oil
- 2 tbsp butter
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- Salt and black pepper, to taste
For the Onion Gravy
- 2 large onions, thinly sliced
- 3 cloves garlic, minced
- 2 tbsp all-purpose flour
- 2 cups beef broth
- ½ cup heavy cream
- 1 tsp Worcestershire sauce
- 1 tsp fresh thyme
- 1 tbsp butter
For Serving
- Creamy mashed potatoes
- Fresh parsley, chopped
Instructions
- Season the pork chops with garlic powder, onion powder, paprika, salt, and pepper.
- Heat olive oil in a large skillet over medium-high heat. Sear the pork chops for 4–5 minutes per side until golden. Remove and set aside.
- In the same skillet, melt the butter and cook the onions for 10–12 minutes until caramelized.
- Add the garlic and cook for 30 seconds.
- Sprinkle in the flour and stir for 1 minute.
- Gradually whisk in the beef broth, then add the Worcestershire sauce, thyme, and heavy cream. Simmer until the gravy thickens.
- Return the pork chops to the skillet and simmer for 8–10 minutes until fully cooked and coated in the rich onion gravy.
- Serve over creamy mashed potatoes and garnish with chopped parsley.
