Peach Cobbler Cheesecake
Ingredients
For the Crust
- 250 g graham cracker crumbs
- 100 g melted butter
- 1 tsp cinnamon
For the Filling
- 600 g cream cheese, softened
- 200 ml heavy cream
- 150 g granulated sugar
- 3 eggs
- 1 tsp vanilla extract
- 2 ripe peaches, diced
For the Cobbler Topping
- 2 peaches, thinly sliced
- 50 g brown sugar
- 50 g flour
- 40 g cold butter, cubed
- 1 tsp cinnamon
Instructions
- Preheat the oven to 160°C (320°F).
- Mix the graham cracker crumbs, cinnamon, and melted butter. Press into a springform pan and bake for 10 minutes.
- Beat the cream cheese until smooth.
- Add the sugar, eggs, vanilla, and heavy cream. Fold in the diced peaches.
- Pour the filling over the cooled crust.
- Mix the flour, brown sugar, cinnamon, and butter until crumbly, then sprinkle over the cheesecake.
- Arrange the peach slices on top.
- Bake for 55–60 minutes, until the center is just set.
- Cool completely, then chill for at least 6 hours.
- Serve with caramel sauce or whipped cream if desired.
