No-Bake Cherry Tiramisu
Ingredients
For the Base
- 250 g ladyfinger biscuits (Savoiardi)
- 1 cup (240 ml) milk
- 1 tsp vanilla extract
For the Cream
- 500 g mascarpone cheese
- 250 ml heavy whipping cream
- ½ cup (60 g) powdered sugar
- 1 tsp vanilla extract
For the Cherry Layer
- 2 cups fresh or frozen cherries, pitted
- 2 tbsp granulated sugar
- 1 tbsp lemon juice
- 1 tbsp cornstarch mixed with 2 tbsp water
For the Topping
- Fresh cherries
- Dark and white chocolate shavings
- Fresh mint leaves (optional)
Instructions
- In a saucepan, combine the cherries, sugar, and lemon juice. Cook over medium heat for 5–7 minutes until the cherries soften.
- Stir in the cornstarch slurry and cook for 1–2 minutes until thickened. Let the mixture cool completely.
- In a large bowl, whip the heavy cream until soft peaks form.
- In another bowl, beat the mascarpone, powdered sugar, and vanilla until smooth.
- Fold the whipped cream into the mascarpone mixture until light and fluffy.
- Quickly dip each ladyfinger into the vanilla milk and arrange a layer in the bottom of a baking dish.
- Spread half of the mascarpone cream over the biscuits.
- Spoon half of the cherry mixture over the cream.
- Repeat the layers with the remaining biscuits, cream, and cherries.
- Decorate with fresh cherries, chocolate shavings, and mint leaves.
- Refrigerate for at least 6 hours, preferably overnight, before serving.
