No-Bake Cherry Tiramisu

Ingredients

For the Base

  • 250 g ladyfinger biscuits (Savoiardi)
  • 1 cup (240 ml) milk
  • 1 tsp vanilla extract

For the Cream

  • 500 g mascarpone cheese
  • 250 ml heavy whipping cream
  • ½ cup (60 g) powdered sugar
  • 1 tsp vanilla extract

For the Cherry Layer

  • 2 cups fresh or frozen cherries, pitted
  • 2 tbsp granulated sugar
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch mixed with 2 tbsp water

For the Topping

  • Fresh cherries
  • Dark and white chocolate shavings
  • Fresh mint leaves (optional)

Instructions

  1. In a saucepan, combine the cherries, sugar, and lemon juice. Cook over medium heat for 5–7 minutes until the cherries soften.
  2. Stir in the cornstarch slurry and cook for 1–2 minutes until thickened. Let the mixture cool completely.
  3. In a large bowl, whip the heavy cream until soft peaks form.
  4. In another bowl, beat the mascarpone, powdered sugar, and vanilla until smooth.
  5. Fold the whipped cream into the mascarpone mixture until light and fluffy.
  6. Quickly dip each ladyfinger into the vanilla milk and arrange a layer in the bottom of a baking dish.
  7. Spread half of the mascarpone cream over the biscuits.
  8. Spoon half of the cherry mixture over the cream.
  9. Repeat the layers with the remaining biscuits, cream, and cherries.
  10. Decorate with fresh cherries, chocolate shavings, and mint leaves.
  11. Refrigerate for at least 6 hours, preferably overnight, before serving.
