Mediterranean Shrimp & Burrata Salad
Ingredients
- 250 g large shrimp, peeled and deveined
- 1 tbsp olive oil
- 1 tsp smoked paprika
- ½ tsp garlic powder
- Salt and black pepper, to taste
- 150 g burrata cheese
- 2 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- ½ avocado, sliced
- ¼ red onion, thinly sliced
- Fresh basil leaves
Lemon Herb Dressing
- 3 tbsp extra virgin olive oil
- 2 tbsp fresh lemon juice
- 1 tsp Dijon mustard
- 1 tsp honey
- 1 garlic clove, minced
- Salt and black pepper, to taste
Instructions
- Season the shrimp with paprika, garlic powder, salt, and pepper.
- Heat the olive oil in a skillet and cook the shrimp for 2–3 minutes per side until pink and lightly golden.
- Arrange the mixed greens on a large serving platter.
- Add the tomatoes, cucumber, avocado, red onion, and burrata.
- Place the warm shrimp on top.
- Whisk together all the dressing ingredients and drizzle over the salad.
- Garnish with fresh basil and serve immediately with crusty bread.
