Grilled Chicken with Roasted Cherry Tomatoes & Arugula

Ingredients (Serves 2)

  • 2 chicken breasts
  • 1 cup cherry tomatoes, halved
  • 2 cups arugula (rocket)
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • Salt and black pepper to taste
  • 1 tbsp lemon juice
  • Optional: grated Parmesan cheese

Instructions

  1. Season the chicken with garlic, paprika, Italian seasoning, salt, and pepper.
  2. Heat 1 tbsp olive oil in a skillet or grill pan over medium-high heat.
  3. Cook the chicken for 5–7 minutes per side until golden and fully cooked.
  4. In the same pan, add the cherry tomatoes and cook for 2–3 minutes until lightly charred.
  5. Toss the arugula with the remaining olive oil and lemon juice.
  6. Place the arugula on a plate, top with the grilled chicken, and add the roasted tomatoes.
  7. Sprinkle with Parmesan cheese if desired and serve immediately.
