Grilled Chicken with Roasted Cherry Tomatoes & Arugula
Ingredients (Serves 2)
- 2 chicken breasts
- 1 cup cherry tomatoes, halved
- 2 cups arugula (rocket)
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp paprika
- 1 tsp Italian seasoning
- Salt and black pepper to taste
- 1 tbsp lemon juice
- Optional: grated Parmesan cheese
Instructions
- Season the chicken with garlic, paprika, Italian seasoning, salt, and pepper.
- Heat 1 tbsp olive oil in a skillet or grill pan over medium-high heat.
- Cook the chicken for 5–7 minutes per side until golden and fully cooked.
- In the same pan, add the cherry tomatoes and cook for 2–3 minutes until lightly charred.
- Toss the arugula with the remaining olive oil and lemon juice.
- Place the arugula on a plate, top with the grilled chicken, and add the roasted tomatoes.
- Sprinkle with Parmesan cheese if desired and serve immediately.
