Garlic Butter Cod with Cherry Tomatoes
Ingredients (Serves 4)
- 4 cod fillets (about 6 oz / 170 g each)
- 2 tbsp olive oil
- 2 tbsp unsalted butter
- 4 garlic cloves, minced
- 2 cups cherry tomatoes (red and yellow), halved
- ½ cup fish or chicken broth
- ¼ cup fresh lemon juice
- 1 tsp lemon zest
- 2 tbsp fresh parsley, chopped
- 2 tbsp fresh basil, chopped
- ½ tsp red pepper flakes (optional)
- Salt and black pepper, to taste
Instructions
- Season the cod fillets with salt and black pepper.
- Heat the olive oil and butter in a large skillet over medium heat.
- Add the minced garlic and sauté for about 30 seconds until fragrant.
- Stir in the cherry tomatoes and cook for 3–4 minutes until they begin to soften.
- Pour in the broth, lemon juice, and lemon zest. Bring to a gentle simmer.
- Nestle the cod fillets into the sauce, cover, and cook for 8–10 minutes, or until the fish is opaque and flakes easily with a fork.
- Sprinkle with fresh parsley and basil before serving. Spoon the buttery tomato sauce over the fish.
