Garlic Butter Cod with Cherry Tomatoes

Ingredients (Serves 4)

  • 4 cod fillets (about 6 oz / 170 g each)
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 4 garlic cloves, minced
  • 2 cups cherry tomatoes (red and yellow), halved
  • ½ cup fish or chicken broth
  • ¼ cup fresh lemon juice
  • 1 tsp lemon zest
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp fresh basil, chopped
  • ½ tsp red pepper flakes (optional)
  • Salt and black pepper, to taste

Instructions

  1. Season the cod fillets with salt and black pepper.
  2. Heat the olive oil and butter in a large skillet over medium heat.
  3. Add the minced garlic and sauté for about 30 seconds until fragrant.
  4. Stir in the cherry tomatoes and cook for 3–4 minutes until they begin to soften.
  5. Pour in the broth, lemon juice, and lemon zest. Bring to a gentle simmer.
  6. Nestle the cod fillets into the sauce, cover, and cook for 8–10 minutes, or until the fish is opaque and flakes easily with a fork.
  7. Sprinkle with fresh parsley and basil before serving. Spoon the buttery tomato sauce over the fish.
