Ingredients

  • 1 kg ground chicken (breast or thigh)
  • 1 large carrot, finely chopped or grated
  • 1 large onion (or 2 small), finely chopped
  • 400 g mushrooms, finely chopped
  • 150 g mozzarella cheese, diced
  • 2–3 tbsp vegetable oil
  • Sweet chili sauce (or your favorite glaze)
  • Salt
  • Black pepper
  • Paprika

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Mix the ground chicken with the onion, salt, black pepper, and paprika. Knead well until the mixture becomes sticky and holds together.
  3. Heat the oil in a pan and sauté the carrot for a few minutes. Add the mushrooms and cook until all the moisture has evaporated. Let cool.
  4. Fold the cooked vegetables and diced mozzarella into the chicken mixture.
  5. Spread the mixture evenly onto a baking bag or parchment paper, then roll it tightly into a log shape.
  6. Bake for 40–45 minutes.
  7. Remove the wrapping, brush the roll with sweet chili sauce (or your preferred sauce), and bake for another 10 minutes until beautifully glazed.
  8. Let rest for 10 minutes before slicing and serving.
