Ingredients
- 1 kg ground chicken (breast or thigh)
- 1 large carrot, finely chopped or grated
- 1 large onion (or 2 small), finely chopped
- 400 g mushrooms, finely chopped
- 150 g mozzarella cheese, diced
- 2–3 tbsp vegetable oil
- Sweet chili sauce (or your favorite glaze)
- Salt
- Black pepper
- Paprika
Instructions
- Preheat the oven to 200°C (400°F).
- Mix the ground chicken with the onion, salt, black pepper, and paprika. Knead well until the mixture becomes sticky and holds together.
- Heat the oil in a pan and sauté the carrot for a few minutes. Add the mushrooms and cook until all the moisture has evaporated. Let cool.
- Fold the cooked vegetables and diced mozzarella into the chicken mixture.
- Spread the mixture evenly onto a baking bag or parchment paper, then roll it tightly into a log shape.
- Bake for 40–45 minutes.
- Remove the wrapping, brush the roll with sweet chili sauce (or your preferred sauce), and bake for another 10 minutes until beautifully glazed.
- Let rest for 10 minutes before slicing and serving.
