Pear, Brie & Cranberry Flatbread

Ingredients (Serves 4)

For the Flatbread

  • 1 pizza dough or flatbread
  • 2 tbsp olive oil
  • 8 oz (225 g) Brie cheese, sliced
  • 1 ripe pear, thinly sliced
  • ⅓ cup dried cranberries
  • ¼ cup sliced almonds
  • 1 tbsp fresh thyme leaves
  • Salt and freshly ground black pepper

For Finishing

  • 2 tbsp honey
  • Extra fresh thyme for garnish
  • A handful of arugula (optional)
Instructions
  1. Preheat the oven to 425°F (220°C).
  2. Roll out the pizza dough and place it on a baking tray.
  3. Brush the dough lightly with olive oil.
  4. Arrange the Brie slices evenly over the dough.
  5. Top with the pear slices, dried cranberries, and sliced almonds.
  6. Sprinkle with fresh thyme, salt, and black pepper.
  7. Bake for 12–15 minutes, or until the crust is golden and the cheese is melted and bubbly.
  8. Drizzle with honey immediately after baking.
  9. Garnish with extra thyme and serve warm with a fresh arugula salad if desired.
