Grilled Peach Burrata Salad

Ingredients

  • 2 ripe peaches, halved and pitted
  • 150 g burrata cheese
  • 4 cups arugula (rocket)
  • 1 cup cherry tomatoes, halved
  • ¼ red onion, thinly sliced
  • ¼ cup toasted pecans
  • Fresh basil leaves

Honey Balsamic Dressing

  • 3 tbsp extra virgin olive oil
  • 2 tbsp balsamic glaze
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • Salt and freshly ground black pepper

Instructions

  1. Brush the peach halves with a little olive oil and grill for 2–3 minutes per side until lightly caramelized.
  2. Arrange the arugula on a serving platter.
  3. Add the grilled peaches, cherry tomatoes, red onion, toasted pecans, and burrata in the center.
  4. Whisk together the olive oil, balsamic glaze, honey, Dijon mustard, salt, and pepper.
  5. Drizzle the dressing over the salad.
  6. Garnish with fresh basil leaves and serve immediately with toasted artisan bread.
