Mediterranean Shrimp & Burrata Salad

Ingredients

  • 250 g large shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • Salt and black pepper, to taste
  • 150 g burrata cheese
  • 2 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • ½ avocado, sliced
  • ¼ red onion, thinly sliced
  • Fresh basil leaves

Lemon Herb Dressing

  • 3 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • 1 garlic clove, minced
  • Salt and black pepper, to taste

Instructions

  1. Season the shrimp with paprika, garlic powder, salt, and pepper.
  2. Heat the olive oil in a skillet and cook the shrimp for 2–3 minutes per side until pink and lightly golden.
  3. Arrange the mixed greens on a large serving platter.
  4. Add the tomatoes, cucumber, avocado, red onion, and burrata.
  5. Place the warm shrimp on top.
  6. Whisk together all the dressing ingredients and drizzle over the salad.
  7. Garnish with fresh basil and serve immediately with crusty bread.
