Juicy Stuffed Chicken Breast with Mushrooms & Mozzarella
Tender, juicy chicken breasts stuffed with sautéed mushrooms, fresh spinach, garlic, and gooey mozzarella cheese. This easy oven-baked dinner is packed with flavor and perfect for weeknight meals or special occasions.
Ingredients
- 2 large chicken breasts
- 300 g mushrooms, sliced
- 20 g baby spinach (about 1 cup)
- 2 garlic cloves, minced
- 2 tbsp olive oil
- Salt and black pepper, to taste
- 6 slices mozzarella cheese (100–150 g)
- ½ tsp Italian seasoning (optional)
- Red pepper flakes, for garnish (optional)
Instructions
1. Prepare the Filling
- Heat the olive oil in a large skillet over medium heat.
- Add the mushrooms and cook for 5–7 minutes until golden.
- Stir in the spinach and cook until wilted.
- Add the garlic and cook for 1 minute.
- Season with salt and pepper, then remove from the heat.
2. Prepare the Chicken
- Carefully cut a pocket into each chicken breast without slicing all the way through.
- Fill each pocket with the mushroom and spinach mixture.
- Season both sides of the chicken with salt, pepper, and Italian seasoning.
3. Bake
- Preheat the oven to 400°F (200°C).
- Place the stuffed chicken breasts in a lightly greased baking dish.
- Bake for 25 minutes.
4. Add the Cheese
- Remove the chicken from the oven.
- Top each breast with 3 slices of mozzarella.
- Return to the oven and bake for another 8–10 minutes, or until the cheese is melted and bubbly and the chicken reaches an internal temperature of 165°F (74°C).
5. Serve
- Garnish with red pepper flakes or fresh parsley.
- Serve with mashed potatoes, roasted vegetables, rice, or a fresh green salad.
