Juicy Stuffed Chicken Breast with Mushrooms & Mozzarella

Tender, juicy chicken breasts stuffed with sautéed mushrooms, fresh spinach, garlic, and gooey mozzarella cheese. This easy oven-baked dinner is packed with flavor and perfect for weeknight meals or special occasions.

Ingredients

  • 2 large chicken breasts
  • 300 g mushrooms, sliced
  • 20 g baby spinach (about 1 cup)
  • 2 garlic cloves, minced
  • 2 tbsp olive oil
  • Salt and black pepper, to taste
  • 6 slices mozzarella cheese (100–150 g)
  • ½ tsp Italian seasoning (optional)
  • Red pepper flakes, for garnish (optional)

Instructions

1. Prepare the Filling

  • Heat the olive oil in a large skillet over medium heat.
  • Add the mushrooms and cook for 5–7 minutes until golden.
  • Stir in the spinach and cook until wilted.
  • Add the garlic and cook for 1 minute.
  • Season with salt and pepper, then remove from the heat.

2. Prepare the Chicken

  • Carefully cut a pocket into each chicken breast without slicing all the way through.
  • Fill each pocket with the mushroom and spinach mixture.
  • Season both sides of the chicken with salt, pepper, and Italian seasoning.

3. Bake

  • Preheat the oven to 400°F (200°C).
  • Place the stuffed chicken breasts in a lightly greased baking dish.
  • Bake for 25 minutes.

4. Add the Cheese

  • Remove the chicken from the oven.
  • Top each breast with 3 slices of mozzarella.
  • Return to the oven and bake for another 8–10 minutes, or until the cheese is melted and bubbly and the chicken reaches an internal temperature of 165°F (74°C).

5. Serve

  • Garnish with red pepper flakes or fresh parsley.
  • Serve with mashed potatoes, roasted vegetables, rice, or a fresh green salad.
