Creamy Tuscan Chicken Pasta
Ingredients
For the Chicken
- 2 boneless, skinless chicken breasts
- 1 tsp paprika
- 1 tsp garlic powder
- Salt and black pepper, to taste
- 2 tbsp olive oil
- 1 tbsp butter
For the Pasta
- 12 oz (340 g) fettuccine pasta
Creamy Tuscan Sauce
- 2 tbsp butter
- 4 garlic cloves, minced
- 1 small onion, finely diced
- 1 cup cherry tomatoes, halved
- 2 cups fresh spinach
- 1½ cups (360 ml) heavy cream
- 1 cup freshly grated Parmesan cheese
- ½ tsp Italian seasoning
- ¼ tsp crushed red pepper flakes (optional)
- Salt and black pepper, to taste
Instructions
- Cook the fettuccine according to the package directions. Drain and reserve ½ cup of pasta water.
- Season the chicken with paprika, garlic powder, salt, and pepper.
- Heat olive oil and butter in a large skillet. Cook the chicken for 5–6 minutes per side until golden and fully cooked. Remove and let it rest before slicing.
- In the same skillet, melt the butter. Sauté the onion for 2–3 minutes, then add the garlic and cook for 30 seconds.
- Stir in the cherry tomatoes and cook until they soften.
- Add the spinach and cook until wilted.
- Pour in the heavy cream, then stir in the Parmesan cheese and Italian seasoning. Simmer until the sauce thickens.
- Toss in the cooked fettuccine. Add a splash of reserved pasta water if needed.
- Top with the sliced chicken and garnish with extra Parmesan and fresh parsley.
