No-Bake Almond Caramel Tiramisu (Bienenstich Tiramisu)

Ingredients

For the Cream

  • 500 g mascarpone
  • 500 ml heavy whipping cream
  • 2 packets (about 80 g) vanilla pudding cream powder (Paradies Creme Vanilla or similar instant vanilla dessert mix)
  • 250 ml milk (for dipping the ladyfingers)
  • 2 packs ladyfingers (Savoiardi)

For the Almond Caramel Topping

  • 200 g sliced almonds
  • 120 g granulated sugar
  • 100 g unsalted butter
  • 150 ml heavy cream

Instructions

1. Prepare the Cream

  1. Beat the heavy cream until it begins to thicken.
  2. Add the mascarpone and vanilla cream powder.
  3. Continue beating until smooth, thick, and fluffy.

2. Assemble the Dessert

  1. Quickly dip each ladyfinger into the milk.
  2. Arrange a layer of ladyfingers in a 23 × 23 cm (9 × 9-inch) baking dish.
  3. Spread half of the cream mixture over the ladyfingers.
  4. Add another layer of milk-dipped ladyfingers.
  5. Finish with the remaining cream and smooth the top.

3. Make the Almond Caramel

  1. Toast the sliced almonds in a dry skillet until lightly golden. Remove and set aside.
  2. Add the sugar to the skillet without stirring.
  3. Once it starts turning golden, gently stir.
  4. Add the butter and stir until melted.
  5. Slowly pour in the heavy cream while stirring continuously.
  6. Continue cooking over medium heat until the caramel becomes smooth and creamy.
  7. Let it cool for a few minutes, then stir in the toasted almonds.

4. Finish

  1. Spread the almond caramel evenly over the cream layer.
  2. Refrigerate overnight (or at least 8 hours).
  3. Slice and serve chilled.
