Braised Turkey with Onions and Olives

Ingredients

  • 2 lbs (900 g) turkey thighs or turkey breast, cut into large chunks
  • 2 tbsp olive oil
  • 2 large onions, sliced
  • 4 garlic cloves, minced
  • 1 cup green or Kalamata olives, pitted
  • 1 tbsp tomato paste
  • 1½ cups chicken or turkey broth
  • 1 tsp paprika
  • 1 tsp ground cumin
  • ½ tsp turmeric
  • ½ tsp dried thyme
  • ½ tsp dried oregano
  • Salt and black pepper, to taste
  • 2 tbsp chopped fresh parsley
  • Lemon wedges, for serving (optional)

Instructions

  1. Heat the olive oil in a large skillet or Dutch oven over medium-high heat.
  2. Season the turkey with salt and black pepper, then sear for 4–5 minutes per side until lightly browned. Remove and set aside.
  3. In the same pan, cook the sliced onions for about 8 minutes until soft and caramelized.
  4. Add the garlic and tomato paste, stirring for 1 minute until fragrant.
  5. Mix in the paprika, cumin, turmeric, thyme, and oregano.
  6. Pour in the broth and scrape up any browned bits from the bottom of the pan.
  7. Return the turkey to the pan, cover, and simmer over low heat for 40–45 minutes, or until the turkey is tender.
  8. Add the olives during the last 10 minutes of cooking.
  9. Garnish with fresh parsley and serve with rice, mashed potatoes, couscous, or crusty bread.
