Braised Turkey with Onions and Olives
Ingredients
- 2 lbs (900 g) turkey thighs or turkey breast, cut into large chunks
- 2 tbsp olive oil
- 2 large onions, sliced
- 4 garlic cloves, minced
- 1 cup green or Kalamata olives, pitted
- 1 tbsp tomato paste
- 1½ cups chicken or turkey broth
- 1 tsp paprika
- 1 tsp ground cumin
- ½ tsp turmeric
- ½ tsp dried thyme
- ½ tsp dried oregano
- Salt and black pepper, to taste
- 2 tbsp chopped fresh parsley
- Lemon wedges, for serving (optional)
Instructions
- Heat the olive oil in a large skillet or Dutch oven over medium-high heat.
- Season the turkey with salt and black pepper, then sear for 4–5 minutes per side until lightly browned. Remove and set aside.
- In the same pan, cook the sliced onions for about 8 minutes until soft and caramelized.
- Add the garlic and tomato paste, stirring for 1 minute until fragrant.
- Mix in the paprika, cumin, turmeric, thyme, and oregano.
- Pour in the broth and scrape up any browned bits from the bottom of the pan.
- Return the turkey to the pan, cover, and simmer over low heat for 40–45 minutes, or until the turkey is tender.
- Add the olives during the last 10 minutes of cooking.
- Garnish with fresh parsley and serve with rice, mashed potatoes, couscous, or crusty bread.
