Chocolate Cherry Tart Cheesecake
Ingredients
For the Chocolate Crust
- 2 cups chocolate cookie crumbs
- 6 tbsp melted butter
For the Cheesecake Layer
- 16 oz (450 g) cream cheese, softened
- ½ cup granulated sugar
- 1 tsp vanilla extract
- 1 cup heavy whipping cream
- 2 tsp gelatin (or 1 tsp agar-agar for a vegetarian version)
- 2 tbsp warm water
For the Cherry Topping
- 2 cups pitted cherries (fresh or frozen)
- ⅓ cup sugar
- 1 tbsp cornstarch
- 2 tbsp water
- 1 tsp lemon juice
For Decoration
- Melted milk chocolate
- Fresh cherries (optional)
Instructions
- Mix the chocolate cookie crumbs with the melted butter.
- Press the mixture into a tart pan and refrigerate for 30 minutes.
- Beat the cream cheese, sugar, and vanilla until smooth.
- Whip the heavy cream to stiff peaks and gently fold it into the cream cheese mixture.
- Dissolve the gelatin in warm water and mix it into the filling.
- Spread the cheesecake filling over the chilled crust and refrigerate for at least 4 hours.
- In a saucepan, combine the cherries, sugar, lemon juice, cornstarch, and water. Cook until thickened, then let cool.
- Spread the cherry topping over the cheesecake.
- Drizzle with melted milk chocolate.
- Chill for another 30 minutes before slicing and serving.
