Elegant Vanilla Cheesecake
Ingredients
For the Crust
- 200 g digestive biscuits, crushed
- 90 g unsalted butter, melted
For the Filling
- 500 g cream cheese, softened
- 150 g granulated sugar
- 2 large eggs
- 200 ml heavy cream
- 1 teaspoon vanilla extract
- 1 tablespoon cornstarch
For the White Chocolate Glaze
- 200 g white chocolate, chopped
- 120 ml heavy cream
- 1 teaspoon vanilla extract
Decoration
- 2–3 small scoops vanilla ice cream (or vanilla mousse quenelles)
- Edible flowers
- Gold leaf or edible gold pearls (optional)
Instructions
- Preheat the oven to 320°F (160°C).
- Mix the crushed biscuits with the melted butter until evenly combined.
- Press the mixture firmly into the bottom of an 8-inch (20 cm) springform pan.
- Refrigerate the crust for 20 minutes.
- Beat the cream cheese and sugar until smooth and creamy.
- Add the eggs one at a time, mixing after each addition.
- Mix in the heavy cream, vanilla extract, and cornstarch until smooth.
- Pour the filling over the chilled crust.
- Bake for 50–60 minutes, until the edges are set and the center still has a slight wobble.
- Turn off the oven, leave the door slightly open, and let the cheesecake cool gradually for 1 hour.
- Refrigerate for at least 6 hours, preferably overnight.
- Heat the heavy cream until just simmering.
- Pour it over the chopped white chocolate and let stand for 2 minutes.
- Stir until smooth, then add the vanilla extract.
- Allow the glaze to cool slightly before pouring it over the chilled cheesecake to create elegant drips.
- Decorate with vanilla scoops, edible flowers, and gold leaf just before serving.
