Creamy Garlic Chicken Mushroom Pasta
Ingredients
- 12 oz (340 g) spaghetti or fettuccine
- 2 chicken breasts, cut into bite-sized pieces
- 2 tbsp olive oil
- 2 tbsp butter
- 8 oz (225 g) mushrooms, sliced
- 4 garlic cloves, minced
- 1 cup heavy cream
- ½ cup chicken broth
- ¾ cup grated Parmesan cheese
- 1 tsp Italian seasoning
- Salt and black pepper, to taste
- 2 tbsp chopped fresh parsley
Instructions
- Cook the pasta according to package directions until al dente. Reserve ½ cup pasta water, then drain.
- Season the chicken with salt, pepper, and Italian seasoning.
- Heat olive oil in a large skillet over medium-high heat. Cook the chicken until golden and fully cooked. Remove and set aside.
- In the same skillet, melt the butter and sauté the mushrooms for 5–6 minutes until browned.
- Add the garlic and cook for 30 seconds until fragrant.
- Pour in the chicken broth and heavy cream. Simmer for 3–4 minutes.
- Stir in the Parmesan cheese until the sauce is smooth and creamy.
- Return the chicken to the skillet and mix well.
- Toss in the cooked pasta, adding a splash of reserved pasta water if needed to loosen the sauce.
- Garnish with fresh parsley and extra Parmesan, then serve immediately.
